At 90-proof our W.R. Welter is aged for less then 24 hours in new white oak. Its mash bill is the same as the Ravenswood Rye, which is to say it’s a heavily wheated organic rye. The notes on this fresh light product are bright and florally. This is surprisingly soft on the pallet for a new-make spirit with a broad examination of the grain on your tongue, unmolested by the barrel. Tasting the raw characteristics of the rye and wheat grain is a special experience.
