With its warm, abundant sunshine and cool, Pacific breezes, California has the ideal conditions for raising grapes with ripe flavors and crisp acidity. We selected fruit for our Moscato from vineyards along the Central Coast and Central Valley that showed intense varietal character. These vineyards, when put together, created layers of aromas and flavors in the wine.We harvested our grapes at the optimum balance of flavor. At the winery, the fruit was placed in stainless steel tanks for a long, cool fermentation. The low temperatures lengthened the extraction process, coaxing the delicate nuances from the fruit and maintaining inherently bright character. To retain a touch of natural sugars, we arrested fermentation. Like many Italian Moscatos, we gave our wine a slight fizz, adding light, bubbly levity to the wine.
