Wine Maker Notes
The name Jema derives from the Italian word “gemma,” which has a dual meaning of “the bud on a vine” and “precious gem.” The grapes for this wine are hand harvested and dried in crates for 20 days, after which the wine is fermented on the skins in stainless steel. Following 18 months of aging in French oak barriques, the wine is further aged for 6 months in large oak casks and 12 months in bottle. This full, balanced wine offers aromas of cherries accented by hints of cocoa and coffee. Enjoy Cesari Jema Corvina with game, grilled meats, stews, and full-flavored cheeses. Decant at least two hours before serving.
