Three is the magic number when it comes to vine age—the year when the vines hit their stride and the grapes start to show their strongest character. Our North Quaid Vineyard, in its third vintage with Riesling, is just beginning to flaunt its affinity for this varietal. Situated on the eastern side of the Gavilan Mountains, the decomposed granite soils are full of large rocks and stones, which help not only with drainage but also with heat radiation, a bonus in an area where temperatures tend to remain fairly moderate throughout the summer. Here, fruit develops slowly and the Riesling is picked just as it begins to take on a golden hue, hinting of its ripe, honeyed character.Our Riesling is a single-vineyard bottling. Therefore, in making the wine, it was paramount to let the fruit’s unique character shine while simultaneously achieving an intricate balance and juicy acidity throughout the wine. After the grapes were hand harvested, we pressed the fruit and separated the press fraction from the free-run juice, fermenting the two separately. We used stainless steel tanks and cool temperatures, lengthening fermentation to almost three weeks to preserve the fruit and aromatics. Just before the wine reached dryness, we arrested fermentation, leaving a sweet touch for balance.
