The Savennieres is a dry, honeyed white of unmatched concentration, perfume and longevity.
The fruit is sourced from two two lieux-dits, the Clos du Papillon and the Clos St. Yves. Soils are primarily schist and the vines are trained in the vignes hautes et larges (VHL) model. Grapes were hand-picked and pressed before fermentation in temperature controlled steel tanks. Like his father Jean, Florent does not actively encourage nor discourage malolactic fermentation.
