More dense and structured, yet still vibrant and very pure, the 2007 Abelard is 90% Grenache and 10% Syrah. Loaded with deep blackberry and black cherry fruit, licorice, crushed stone and hints of roasted herbs, it is full-bodied, rich and concentrated, with knockout precision and focus. It is serious stuff and still a baby. Drink it over the coming decade.
Rich, spicy and meaty aromas with a touch of garrigue precede a lush and bold palate that features notes of blackberry, Morello cherry, and baking spices. Nicely dense with warm, sweet and spicy fruit that is backed by grippy tannins.
(90% Grenache/10% Syrah). The storied romance of Heloise and Abelard is the inspiration for this wine. The grapes were harvested from 45+ year old vines, cold macerated for three days in wood tanks, fermented for 10 days with punch downs, pumps overs and delestage twice a day, then macerated on their skins for four weeks. Aged for 11 months in new and neutral oak, the wine was bottled unfined and unfiltered and aged for an additional 3-4 years.
