Wine Maker Notes
The grapes are machine harvested early in the morning to avoid the daytime heat, pressed and fermented in stainless steel tanks at a controlled low temperature, to encourage development of aroma and flavor. After malolactic fermentation, the wine remains 4-6 months in tank before bottling.
Serve cold and refreshing. Drink as an aperitif, with hors d’oeuvres, shellfish, pasta, rice, and smoked or cooked fish.
