The east facing Les Crais and Jouise vineyards are planted on well drained, moderately deep clay and limestone soil. Hand-harvested and vinified with 20% whole-clusters beginning with a cold maceration. 28 day total maceration with punch-downs and pump-overs during alcoholic fermentation. Aged 22 months in lightly toasted Allier oak (30% new) with one racking. Unfined and unfiltered.
