The wine has a brilliant, pale straw hue with greenish glints. The taste is crisp, dry, and delicate with a clean finish. It is best enjoyed chilled and young.
Collegiata Frascati is vinified in the hills overlooking the city of Rome. The grapes are harvested in late August to early September. The must is cooled and fermentation takes place under temperature controlled conditions. The wine is aged in stainless steel tanks until it is bottled and released in the spring following the vintage.
Frascati is the quintessential dry white wine. It is perfect with Pasta alla Matriciana, Fettucine al Burro or Alfredo, and Saltimbocca alla Romagna.
