For the production of Chianti Classico Santedame uses only the best grapes harvested by hand. The production per hectare is 50 quintals, for a soil rich in texture (from "marl"), low fertility and shallow, and the microclimate characterized by large temperature differences between day and night, dry and conducive to optimal evolution of the constituents of grapes during ripening, giving the richness and complexity. After malolactic fermentation, the wine is aged for 8 months before in French oak barrels of first, second and third step, and then in steel vats
