Elegant, layered aromas of dark berries, spices and fragrant florals including rose, lavender, exotic anise, and cinnamon take a few moments to develop. The balanced and supple finish echoes bright and pure flavors of cherries and crushed rock.
The grapes for La Source were harvested from biodynamically farmed Dijon clone vines that were planted along a deep shelf of ancient volcanic rock. The top soils from this part of the vineyard are relatively shallow, between 2-5 feet and contain a high percentage of iron. After cold soaking in open-top oak and concrete fermentors for 4-5 days, the grapes fermented naturally and were punched down twice per day during fermentation. The wine aged for 16 months in French oak barrels (30% new) and was bottled unfiltered and unfined.
