Derived from the Italian word gemma, which has a dual meaning of “vine bud” and “precious gem,” Jèma is a pure expression of Corvina – the region’s signature varietal. Produced from a 3-hectare single vineyard located in the heart of Valpolicella Classico, Cesari’s “gem” is full, supple, and well-balanced with rounded tannins. Cherries pervade the nose backed by toasted mocha notes lent from 18 months of aging in French oak barrels.
The name Jema derives from the Italian word “gemma,” which has a dual meaning of “the bud on a vine” and “precious gem.” The grapes for this wine are hand harvested and dried in crates for 20 days, after which the wine is fermented on the skins in stainless steel. Following 18 months of aging in French oak barriques, the wine is further aged for 6 months in large oak casks and 12 months in bottle.
