Cabernet Sauvignon from Paso Robles all by itself is a sexy beast, but it really shines when blended with its cousins: Merlot and Cabernet Franc. The Cabernet Sauvignon provides black fruits, licorice and savory herb and a beautiful overall structure. Cabernet Franc lends red fruits and white pepper spice, and Merlot fills in the mid-palate and offers a ripe plum juiciness all the way through to the finish. This deeply layered, complex wine can easily pair with robustly flavored foods or, for those who are not faint of heart… stand alone.
