Our inaugural 2016 William Hill Estate Napa Valley Sauvignon Blanc is a deeply layered, exquisitely balanced example of a classic grape variety. Ours is rich and lingering, offering density and weight on the palate while retaining the grape’s signature bright acidity and hints of minerality. Opening with aromas and flavors of passion fruit, grapefruit and kaffir lime, the creamy mid-palate features notes of white peach, honeydew and guava. Juicy tropical notes linger on the long, persistent finish.

The 2016 vintage was another in five consecutive years of exquisite harvest. Marked by typical rainfall levels through winter and early spring followed by a consistently sunny and mild growing season, vineyards responded with a nicely balanced crop and healthy growth. Grapes developed slowly and evenly throughout the ideal summer, cooled at night by the Napa Valley’s renowned diurnal temperature shift. Harvest began a bit early, yielding uniformly high quality Sauvignon Blanc with its signature zesty acidity and well-developed citrus, stone fruit and tropical flavors.

For our Napa Valley Sauvignon Blanc, we opted for a slow and cool fermentation to preserve bright aromatics, textural richness and layered fruit complexity. After the grapes were pressed, the juice was racked and fermented at cool temperatures, which slowed the process and allowed more time on lees. Primarily stainless steel fermented, some lots were fermented in barrels or concrete eggs for additional lees contact, which contributed to the wine’s creaminess.
