Straw yellow in color, the wine shows intense and delicate aromas of fruit, particularly ripe apples, apricots, and peaches. The palate is full and fresh and is endowed with a soft and aromatic finish and aftertaste.
The 2016 vintage was characterized by a mild winter with temperatures above seasonal averages and by scarce rainfall. Abundant spring rains, instead, assisted in replenishing useful reserves of ground water in the soil. Bud burst began in mid-March, slightly earlier than usual, and was followed by a summer season marked by good warmth and very positive temperature swings from daytime heat to evening and nighttime coolness, determining factors for the quality of the vintage. Good weather in September and October produced fine ripening and very healthy grapes which benefitted, again, from significant temperature swings from day to night, indispensable for crisp and aromatic wines.
The grapes, Procanico and Grechetto, were harvested separately and then, both, destemmed and given a soft pressing. The must was chilled to a temperature of 50° Fahrenheit (10° centigrade) to assist and natural static settling of impurities. The clean must was then racked into stainless steel fermenting tanks and fermented at temperatures held to a maximum of 64° Fahrenheit (18° centigrade) and the wine conserved in stainless steel at a temperature of 50° Fahrenheit. The wine was then worked in small batches before bottling in order to fully conserve freshness and fragrance.
