The Spanish Quarter white grapes are harvested by night to keep the fruit cool and to preserve their aromatics. After harvesting, the grapes are de-stemmed, pressed, and then each variety and lot is sent to separate stainless steel tanks to undergo fermentation. After blending, the wines are kept in tanks until bottling to retain their full fruit character and aromas.
