Steely yellow colored wine of defined aromatic mineral notes, citric fresh fruits, honey and white flowers. On the palate the wine is very fresh, very balanced, fruity, with a large mouth structure. Pinot Grigio is the most popular white wine produced in northern Italy. Italian Pinot Grigio is normally very light and crisp, but La Consulta combines the soft alluring flavors of Veneto with the structure and breed of Trentino to produce what we feel is the perfect Pinot Grigio. Full and rich, with fresh ripe apple and pear aromas, and delicious juicy flavors.
In 1961, the La Consulta oenologist had what proved to be a brilliant idea. He decided to try the white vinification technique used for the production of French Champagne on the best Pinot Grigio grapes from Trentino-Alto Adige. This led to the creation of an innovative white wine which, with its fresh aroma and silky taste, created a new fashion in white wine drinking. This wine has since continued to gain in popularity both in Italy and abroad, maintaining a clear leadership in the Pinot Grigio D.O.C. category.
La Consulta was the first company to vinify the pinkish Pinot Grigio grapes as white wine. The must is not left on the skins to avoid its acquiring their rust-red color. After soft-pressing the must is left to ferment 15-20 days at 18°-20°C. The wine is then stored at 15°-16°C. in special stainless-steel tanks until bottling.
La Consulta" is the name of the town and area in Mendoza where General San Martin 'consulted' the indigenous chieftains on which mountain passes should his army march to cross the Andes during the Argentine independence war. Today, La Consulta is renowned as an area where high-quality vines are grown.
