Our Kosher Cabernet is produced from our Certified Organic Trestle Glen Vineyard. These 20-year-old Cabernet vines have combined with an exceptional vintage to produce an outstanding Sonoma Valley Cabernet. The warm year and long hang time allows us to produce a concentrated and complex wine. The unique micro climate at Olive Hill features underground hot springs that warm the soil and help prevent frost. Trestle Glen is the closest vineyard to Sonoma Mountain, which acts as a protective buffer to coastal fog so the grapes get more sun exposure making for ideal Cabernet growing conditions. It is also near Sonoma Creek which provides soil filled with rocks and high in mineral content.
Produced using only Kosher certified methods and products. Wine was prepared using two lots and then blended together after aging. First lot was cold soaked for 48 hours and tank fermented. The second lot was bin fermented with hand punch downs. Free run and light press on both. Lots aged separately for 28 months in 53% new, 36% neutral and 11% two-year-old French oak barrels and then blended together.
Aromas of cranberry and candied plum accompany flavors of red cherry and cranberry in the 2014 B.R. Cohn Trestle Glen Cabernet Sauvignon. This wine is medium bodied with supple tannins and bright acidity on the palate making it an excellent food-pairing wine.
Perfect with corned beef brisket, Passover lamb shank, or beef and barley stew.
