Wine maker notes
The fruit for this wine was harvested from select vineyards located on the alluvial bench land of the Grave del Friuli region, west of the town of San Daniele del Friuli. Our sites are generally south facing, with soils made up of gravel and sand, and the combination of extra sunlight, low vigor, and exceptional drainage, produces grapes that develop full fruit flavors while maintaining the acidity that is typical of the variety. In the winery, we crush the grapes as whole clusters and immediately press juice from the must to limit oxygenation. We then initiate a several week long, cool fermentation at 18°C, entirely in stainless steel in order to preserve the delicate fruit flavors expressed in the juice. The finished wine is lightly fined and filtered before bottling.
Outstanding as an aperitif, or when paired with summer salads, snapper, sole, sushi, grilled chicken, and risotto-based dishes, this is an excellent example of Friulian Pinot Grigio at its finest.
