Traditional elaboration 100% destemmed with stepped and slight overpumps during the fermentation.
Alcoholic fermentation: 8 days at 26-28 ºC with autochthonous yeast selected from our own vineyards.
Post-fermentative maceration: For 12 days.
Malolactic fermentation: In new French oak barrels (100%).
Barrel: 18 months in new French oak barrels (100%). Trasiegos every four months.
