It is this spirit the inspiration of many legends such as the St. Patrick's, the patron of Irish Whiskey, who taught people how to distillate the spirit. Whiskey dates back to the 15th Century when it was produced by the Monks with the only objective to create a medicine for "healing purposes". It was also produced by farmers in order to make a good use of remaining grains after the harvests.

When I lived in Northern Ireland in the 1980's I used to drink a mixture of illegal distilled spirits, which was called "poteen" that was mixed with honey. I was also a frequenter of Bushmills, making it a must see stop for all of my American guests. I am happy to see that Bushmills has brought to the open market that wonderful combination of poteen and honey. Please note that this and all of the Bushmills Single Markets should only be served in a clean glass; do not contaminate with anything else, ice included. Sip and enjoy!
