A very intense and light ruby color; fine and complex aromas, featuring notes of blackcurrant, menthol, mineral notes, and a floral edge; flavour notes include cherry brandy conserves, and the ripe tannins of a classic Cabernet Sauvignon. This is a structured wine, rounded and powerful in the mouth, elegant, and ideal for laying down.
Our Wave Series Pinot Noir has a light ruby color. The nose has fresh cherry, pure raspberry, and soft spicy notes of cinnamon and mocha with gentle earthy undertones. Balanced and vibrant, our Pinot Noir has perfumed fruit aromas and a juicy vibrant mouthfeel that pairs perfectly with a variety of foods, from pork and beef tenderloin to salmon steaks.
The grapes were handpicked and carefully transferred into the winery for quick processing. Once in the winery the grapes went through a delicate bunch selection process prior to destemming and crushing. The must was cold macerated for 5 days at 8ºC to maximize primary aroma retention. Fermentation was carried out in open tank fermenters at 26 – 24ºC with native yeast. The gentle extraction with manual pressing ensured intense deep flavors and a soft mouth feel. Our Wave Series wines are unmasked, pure reflections of what the vineyards produce. The wine is bottled young without any oak contact to show the character, vibrancy and freshness Pinot Noir can achieve in the South Pacific coast of Chile.
