Wine Tasting Notes
This wine is made from four different Chardonnay clones chosen for their dynamic flavor profile, cluster and berry size. Carpe Diem is ripe with aromas and very fruity, but with limited oak expressions. Acidity levels show off the Anderson Valley climate. This Chardonnay will go well with baked halibut and a lightly dressed spinach and cherry tomato orzo.
Bright and brisk from the outset and a wine that reins in ripeness without sacrifice of keen Chardonnay fruit, this tangy offering is true to the racy Carpe Diem style and sports plenty of acid yet never wanders into lemony austerity. It shows a nice sense of polish and is complete without being big and bold, and it will make a fine foil with dishes ranging from seared scallops to a platter of delicate sand dabs.
