This is a very innovative product, a young "Super-Tuscan", which combines the power and deep colour of a young wine with the elegance and balance of a wine much older thanks to wood ageing and whose characteristics are never found together in the same wine. It is made from Sangiovese 70% and mainly Cabernet Sauvignon grapes. The two grape varieties are vinified separately, since they ripen at different times. Toward the end of fermentation they are blended and placed in small wooden casks where they slowly complete alcoholic and malolactic fermentation.
The wine sits a deep garnet with violet reflections offering a bouquet of intense dark fruits with hints of cherry, coffee, vanilla and spice. The palate is soft yet complex with a fine finish. Mark this wine out for special attention, we predict a bright future for Dogajolo and recommend trying a bottle for yourself.
For its fruity characteristics, it can be paired even with first courses and white meats, but you will taste the best of this wine in combination with flavoured dishes, such as typical regional cold cuts, roasts, grilled red meat.
