Made with grapes harvested by hand, the grapes are then subjected to a double selection before being fermented in small, open top stainless steel tanks. The wine is then aged in French oak barrels for 14 months (in new and used barrels) and bottled without filtration. On the nose a complex bouquet of dark cherry and cedar is accompanied by more savoury notes of smoke, moist earth and bramble. In the mouth layered flavours of blackberry and leather give way to a smoky, slightly saline finish.
