Manual selection of clusters harvested in perforated cassettes and delicately downloaded into the hopper of the paper tray. The fermentation takes place without the addition of selected yeasts with long macerations on the controlled temperature pomace with frequent scalar replenishment. At the end of the malolactic fermentation the wine is poured into tonneaux and wood barrels for a minimum period of two years. The aging continues in steel tanks until bottling. The aging in the bottle requires at least six months rest before marketing.
