Covenant “Lavan” (which means “white” in Hebrew) is sourced from a single vineyard on Olivet Lane in the Russian River Valley. It is barrel fermented in French oak (30% new) with native yeast and full malolactic fermentention. Aged 12 months in barrel, stirred on the lees every two weeks through malolactic, the wine is bottled unfined and unfiltered.
Tasting Notes: We try to harness a blend of lush California flavors tempered with cool-climate structure that hinges on firm acidity with moderate body. Stone fruit, citrus and spice come to mind on the palate. There’s a modest hint of toasty oak framing the ensemble, which ends with a fresh, clean finish.
This flavorful chardonnay is notable for its subtle fruit aromas and clear appeance. The flavor is complex with white fruit and citrus flavor notes that are balanced with pleasant acidity and mineral flavors. The finish is long and dry, but leaves a lingering fruit taste.
