It is the only vermouth in the world that is created from 100% Italian white and red wines, 100% flavored with vegetable produced in-house and aged for six months in small oak barrels. Warm, dreamy scent of wood, balsamic and mentholated reminiscent of pharmaceutical mixtures in the past, assenzio balanced, bitter orange and vanilla. Full flavored and soft derived from refining in oak barrels is gradually dominated by menthol and balsamic notes that flow into a bitter aftertaste, yet soft rhubarb and gentian, supported by light muscovado sugar and tannin acquired during aging.
The red variant of Vermouth del Professore – produced by collaboration between Federico Ricatto, Carlos Quaglia and the Jerry Thomas Speakeasy in Rome. Jerry Thomas was a pioneering American 19th century bartender, considered to be the original mixologist and nicknamed "The Professor" and this vermouth is a homage to him.

Warm with notes of woods, balsamico and menthol, balanced by wormwood, bitter orange and vanilla. Full and soft at the palate, notes of balsamico and menthol leading to the bitter aftertaste. As well as notes of rhubarb and gentian, Muscovado sugar and a breath tannin.
The Vermouth has a pleasing amber color and an intriguing aroma of herbs, citrus and honey. As a Rosso, it is supposed to be sweet and that comes out on the palate but it is a a softer sweetness, well balanced with acidity, savory elements and a hint of bitterness. Some inexpensive Vermouths can be cloyingly sweet but that is not the case here. The savory herbal notes will tantalize as some will seem familiar while others seem more exotic, and less common. The subtle bitterness, especially on the lengthy finish, will be a satisfying ending to this compelling wine. It is smooth and medium bodied, and can be drank on its own or in a cocktail.
