Fourth generation from a family of vine-growers, Bernard Defaix started with 2 ha in 1959. From this period, a method to protect the vineyard against spring frost was discovered. The domain stretches over 27 hectares : Chablis Premier Cru (Côte de Lechet, Vaillons and Lys), Chablis and Petit Chablis.The alcoholic fermentation then the malolactic fermentation are done in stainless steel tanks or in oak barrels according to the cuvées. The wine stays on its fine lees during 8 to 12 months.
Saint Bris is located in the region of Auxerre (15 km from Chablis) and the wine comes exclusively from the Sauvignon grape which makes this appellation an exception in Burgundy. Aromas of citrus and lemon, sometimes a hint of fresh grass; the mouth is balanced and structured. It is best to taste it in its youth to preserve all its freshness. Serve at 11 ° C with quiche lorraine or salmon.
