Grapes were manually harvested, gently crushed and cold macerated into stainless steel tanks for 3 days. After that selected yeasts were added and fermented at controlled temperature, immersing the cap twice a day into the juice to achieve much better and softer tannins and colour extraction. Part of the wine was barrel-aged for 10/11 months in French oak old barrels (3rd use) and the balance in staineless steel.
Deep purple-red in color. Aromas of rose petals, violets and white pepper on the nose. Bright on the palate with succulent blackberries and spiced game finish. Lush and very pure.
Pairs well with lean red meat with spices that have earthy or smoky flavors. Serve at 18°C (65°F). A versatile wine suitable for a variety of dishes; in particular grilled or roasted meat.
