Brilliant, cherry red in color, the Five Rivers Pinot Noir leads with with aromas of black raspberry and earth, with a nice hint of cedar. In the mouth you will find a pleasing bright acidity, slightly dusty, fine grained tannins and expressive varietal berry flavors with hints of earth.
Five Rivers Pinot Noir is an ideal match for chicken, veal and lamb dishes, as well as roasted beef and pork.Cold soaked for 2 days prior to a fairly warm fermentation.
The grapes enjoyed approximately one week of skin contact time before pressing, the fermentation then finished after the skins were removed. Aged in seasoned oak barrels for 8-9 months prior to bottling.
