The grapes are harvested by hand in the first half of October with strict selection in wooden plateaux. All production is placed in fruit for a long drying period of at least 120 days resulting in concentration of all components.
It is executed with advanced technology that allows maximum grape tolerance. Following a 15 day cold maceration there is controlled alcoholic fermentation for 20 days. The must is worked with sprouts and refills at a temperature not exceeding 26 ° C.
It follows a maturation in French tonneaux and barriques for 48 months. Then the wine rests in bottle for 8 to 12 months. The wine can be stored for several years, bottle stay will improve its characteristics.
Of ruby red color with slightly orange-colored reflections, the cherry nose in spirits fused with slightly sweet vanilla notes with a break that resembles nutmeg and cocoa. In warm warmth, ethereal with gentle, but powerful, elegant notes that exalt its extraordinary fineness; persistent on the palate.
