The 2014 Greg Norman Estates Shiraz Cabernet Sauvignon is a dark crimson-red color in the glass. Bountiful aromas of red berry, dark cherry, plum and cranberry are pronounced on the nose. Additional light spice and cedar wood notes, derived from the oak maturation, add depth and complexity to the overall bouquet of the wine. Thee medium-bodied wine is generous and Finely structured with soft and supple tannins. A rich array of red and dark-berry fruit, cranberry, anise and black cherry avors linger on the avorful palate. This is a classic red blend of two grape varieties that produce exceptional wines in the Limestone Coast region and which always complement each other in this blend.
With flavors of fresh red fruit, ripe cherry and pomegranate, the long lingering palate has finely balanced acidity, silky tannins and very good persistance of flavor.
The Shiraz and Cabernet Sauvignon varieties for this wine are kept separate in the winery from the crusher until nal stage of wine blending. After destemming and crushing, all fruit was gently fermented for four to eight days then pressed o skins before the harsh bitter tannins were extracted into the wine. Ferments were racked o lees to complete malolactic fermentation in either stainless-steel tanks or in small oak barrels. After 10 months maturation, the individual wine components and barrels were tasted and selected to make up the Final blend.
