This Cabernet Sauvignon's intensity shows immediately through its saturated scarlet appearance and through its warm and inviting nose that offers up aromas of black current, graphite and loam. While this wine has a lovely well-rounded attack, the finely-grained tannic structure is the backbone which underpins all its other qualities. Refreshing acidity plays nicely against the tannins allowing for soft and harmonious flavors of just-ripened plum and oak-spiced vanilla. As the wine progressed through the mid-palate and to the finish, the lingering flavors recede slowly as the regal tannic structure becomes most evident. This wine’s intensity and structure will evolve in a positive manner for years to come.
75% Cabernet Sauvignon, 9% Petite Verdot, 7% Cabernet Franc, 6% Malbec, and 3% Merlot aged 18+ months in all French oak barrels (none new). Purple-red in color with well formed legs; dry, medium-bodied with freshly balanced acidity and medium phenolics. Elegant, balanced, supple fresh claret-like Cabernet that tastes like Cabernet with darker red fruit and spice and tobacco. Easy to drink and like.
Dark ruby in color, the 2007 "Bunkhouse” has an aromatic profile led by black fruits, spicy French oak, vanilla, and cola. Upfront, "Bunkhouse” is layered with blackberry flavors, notes of blueberry reduction, chewy tannin and cassis. The lengthy finish is laden with creamy cherry and cinnamon flavors surrounded by fading French oak tannins with an underlying rocky minerality.
