Terroir: Sourced from the high slopes of Rovereto Superiore of Gavi. Yields are very low at about 2.25 tons per acre.
Vinification: Hand-harvested fruit is brought to the winery after 5-10 minutes, where it is sprayed with dry-ice. Cryo-maceration, cold fermentation (13-14⁰C) in stainless steel tanks and the use of natural yeasts preserves the Cortese’s subtle fruit, flinty acidity and structure. Upon selection, this wine will age for a total of 10 years in stainless steel tank prior to bottling and release.La Scolca Gavi dei Gavi d'Antan 2005
