Bright aromatic notes of Bing cherry and ripe red berries leap out of the glass of our 2016 Pinot Noir. Lush flavors of ripe strawberry and raspberry with notes of black tea and a hint of cardamom coat the palate. Fine, integrated tannins lead to a deliciously long finish.
The grapes for our 2016 Pinot Noir were selectively harvested during early September. The wine underwent a 3 day cold soak followed by a 14 day fermentation after which it was left on skins for an additional 5 days. The wine was then aged with a combination of stainless steel and French oak, 15% new.
Rich, ruby red in colour with the aromas of dark cherry, strawberry and cinnamon spice. On the palate, bright red fruit and a touch of oak mixed with cinnamon to form a complex, well structured and deliciously long finish
Serve slightly chilled at 14 to 15°C. Will pair well with grilled salmon or a succulent joint of oven roasted beef.
