This wine is made entirely from Petit Verdot sourced from a pioneer single-estate vineyard, first planted in 1992. The grapes are harvested in multiple passes, then fermented separately by parcel in stainless steel followed by 12-18 months of aging in first and second-passage French barriques. The final wine stands as a delicious testament to the meticulous handling from grape to bottle.
Deep ruby-red in color with purple reflections, this wine is graced by notes of ripe blackberry fruit, licorice, fresh ground pepper and a hint of toasted oak. On the palate it exhibits flavors of spicy black cherry, fennel, verbena, oregano, and winter savory. Structured tannins, excellent depth and concentration.
This wine is a perfect match for beef stews, shepherds pie, or slow roasted lamb shank.
