Soil : Limestone mixed with clayey marls with depth that varies from 10 cm to 1m Maceration process : 20% whole bunch 80% de-stemmed, short cold maceration. Two "pigeage" a day during the alcoholic fermentation, then short pump-overs during maceration post alcoholic fermentation
