This ink red colored Cabernet Franc from Peju benefits from an hour or more of decanting. The decanting nicely balances out the tannins on this intense wine. It opens with a bold bouquet of blackberries, eucalyptus, black pepper, vanilla and oak. On the palate, this wine is balanced, dusty, dry, and a little acidic. Its displays a flavor profile of blackberries, strawberries, cedar and spices. The wine exhibits good structure and has an extended dry finish with slightly tart cherry flavors rounding it out. I would pair this Cab Franc with a grilled Portobello mushroom on a toasted roll with grilled red peppers and goat cheese. Readers should also consider cellaring this wine for another couple of years!
