VINIFICATION
Manual harvest, sorting during picking. The juices are extracted at low pressure using a pneumatic press, after a slight settling at low temperature, the must is put in barrels, to make the alcoholic fermentation and malolactic fermentation.

BREEDING
French oak barrels of 500 Liters (15% new oak), the breeding will last a total of 12 months. At the end of the breeding period, the wines of the barrels are withdrawn to be assembled in a stainless steel tank. After a collage and a light filtration, the wine is bottled according to the lunar calendar
