A lovely freshness and balance in this wine. Hints of white flowers and honey found both on the nose and in the mouth. Finally in the mouth, a saline mineral taste.The name for this vintage came to us naturally over the years of vintages which we tasted. In fact during the ageing in bottles, the mineral taste intensifies.
Winemaking : Skin maceration. Direct pressing. Blending of two white wines: Roussane and Bourloulenc.

Pale yellow color with green reflections. In the scent white flowers and honey. A delicate taste on the palate, reminiscent of honeydew melon and white peach. It is quite fresh with a fine lemonade note. In the finish a fine, almost salty minerality.
This is a wonderful wine with lobster and lobster. Or you bake halved fennel with a cheese cream sauce made of butter, flour, cream, egg yolk and cheese (Blanch the fennel beforehand in lemon water). Sprinkle with breadcrumbs and drizzle with a little olive oil and sprinkle with butter flakes. Baked in the oven at 200 degrees.
Serve with saffron rice or sweet potatoes.
