Our Cabernet Reserve is a blend of 86% Cabernet Sauvignon, 5% Syrah, 5% Petit Verdot
and 4% Cabernet Franc sourced from our best plots in the Dishon, Ben-Zimra (Upper Galilee). The grapes were carefully selected and hand-harvested in early morning hours from low yielding vines
At the winery the grapes are sorted, destemmed and then crushed. The fermentation takes places in stainless steel temperature controlled tanks at 26-28 degrees for 15 days with regular remontage in order to extract colour, aromas and varietal character. The wine is then pressed, left to clarify naturally and moved to our cellars for ageing.
The nose is generous and perfumed, with fresh fruit notes, a soft herbaceous note and a hint of soft oak spices. Rich and elegant the wine an impressive fruit concentration, complex oak spices notes, good and wellrounded tannins all balanced by fresh mineral acidity. The finish is long.
A complex wine, delicate, rich and elegant. A Galilean Cabernet Sauvignon with a Bordeaux soul. A balancing act of intense tastes and European elegance. Drinks well now but will age beautifully for many years to come.
