Our grapes were harvested at the optimal time in the season in the beautiful region of Languedoc in the South of France when the fruit is ripe and juicy capturing the fresh fruit flavor of Cabernet Sauvignon. The grapes were vinified traditionally with care and passion by skilled winemakers. After the initial maceration, malolactic fermentation took place for 3 weeks at 68°F to bring out the full natural fruit character. A part of the wine was then oak aged for 8 weeks to develop fine tannins and structure.
