Sagniee is the practice of removing juice from red must before any real colour or tannin extraction has occurred, thus leaving the juice pale pink to blush red in colour before fermenting and treating the wine like a white wine instead. Barossa Valley Shiraz was used for this, the first Copper Series, Sagniee Rose, the juice was drained from the Shiraz must with in 18hours of it being crushed and during its cold soak. The juice was then settled and racked off gross lees before being inoculated with an isolated Champagne yeast strain.
