Crisp White Wine with layers of citrus, apple, and hints of tropical fruit
The grapes used for our 2017 sauvignon blanc were harvested at optimum ripeness, during cool nighttime temperatures to preserve fruit freshness. The grapes were pressed into stainless-steel tanks for fermentation, keeping the temperatures between 55 and 62 ̊ f. The colder temperatures helped slow down the fermentation process which allow for more intense aromas. The resulting wines showcase bright citrus, tropical fruit notes, and an expressive mouthfeel.
